Whittard Darling Grey Infused Orange Yogurt Cake

Ingredients

  • ¾ cup plain yogurt
  • 1 cup white sugar
  • cup oil
  • 1 ⅓ cup flour
  • 1 Orange zest
  • 2 eggs
  • 3 teabags of Whittard Darling Grey
  • 2 Cardamom pods seeds crushed
  • 1 tsp vanilla extract
  • 2 ½ tsp baking powder
  • A pinch of salt
  • 2 tbsp Slivered almonds

Toppings:

  • Vanilla ice cream/Sweet cream
  • Thinly sliced oranges
  • Fresh mint leaves

Instructions

  • Preheat your oven to 175°C (350°F). Take out all your ingredients 30 minutes before baking so they reach room temperature.
  • In a mixing bowl, whisk together yogurt and oil until smooth.
  • Add eggs, sugar, and vanilla extract, then whisk again until fully combined.
  • Zest one orange.
  • Take out the seeds from two cardammom pods and crush it using a mortar and pestle or spice grinder.
  • Add the contents of three Whittard Darling Grey tea bags and crush it with the cardamom seeds.
  • Add the orange zest and slivered almonds to the wet mix and stir well.
  • In another bowl, mix together flour, crushed tea, crushed cardamom seeds, baking powder, and salt.
  • Sift the dry ingredients into the wet mixture slowly, folding gently as you go. Don't overmix! Just stir until everything is combined.
  • Let the batter rest for 5 minutes. Meanwhile, grease your cake pan with butter and flour.
  • Pour the batter into the prepared pan. Place the cake pan on a baking tray with a little water to keep the cake from drying out.
  • Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Let the cake cool for 15 minutes before slicing.
  • Serve each slice with a dollop of ice cream or sweet cream, topped with thin orange slices, and fresh mint leaves.

For a healthier version, you can swap out the sugar with a half cup of honey.
