Fresh mint leaves
Instructions
Preheat your oven to 175°C (350°F). Take out all your ingredients 30 minutes before baking so they reach room temperature.
In a mixing bowl, whisk together yogurt and oil until smooth.
Add eggs, sugar, and vanilla extract, then whisk again until fully combined.
Zest one orange.
Take out the seeds from two cardammom pods and crush it using a mortar and pestle or spice grinder.
Add the contents of three Whittard Darling Grey tea bags and crush it with the cardamom seeds.
Add the orange zest and slivered almonds to the wet mix and stir well.
In another bowl, mix together flour, crushed tea, crushed cardamom seeds, baking powder, and salt.
Sift the dry ingredients into the wet mixture slowly, folding gently as you go. Don't overmix! Just stir until everything is combined.
Let the batter rest for 5 minutes. Meanwhile, grease your cake pan with butter and flour.
Pour the batter into the prepared pan. Place the cake pan on a baking tray with a little water to keep the cake from drying out.
Bake for about 30 minutes, or until a toothpick inserted in the center comes out clean.
Let the cake cool for 15 minutes before slicing.
Serve each slice with a dollop of ice cream or sweet cream, topped with thin orange slices, and fresh mint leaves.
